Ah, the cake. The star of the show. The thing I stressed over way too much. At first, I planned to order a custom rainbow cake from a trendy bakery downtown… until I saw the price and realized it cost more than our entire grocery bill for the week. So I decided to make it myself. Now, I’m no Great British Baking Show contestant — but I did my best.

I baked a simple vanilla cake with six layers, each one dyed a different color. Did the red look a little more pink? Yes. Did the orange and yellow kind of blend into one? Maybe. But I covered it all with whipped cream clouds and topped it with a little Rainbow Ruby figurine we got in a toy set. And let me tell you, the smile on my daughter’s face when she saw it? I could’ve baked a pile of rainbow-colored bricks and she still would’ve called it perfect. Also, quick tip: sprinkle edible glitter on literally anything and kids will think it’s fancy.
